This nut roll is made with soft yeast dough and a rich walnut filling. I make it for holidays and special family moments, and it always comes out tender, comforting, and full of flavor.

Ingredients
  

Dough
  • ½ cup Milk Warm not hot
  • 2 packets Active dry yeast Not instant
  • ½ cup Granulated sugar Plus 1 teaspoon for yeast
  • 1 teaspoon Salt Fine
  • 1 cup Butter Softened
  • 1 cup Sour cream Full fat
  • 3 large Eggs Lightly beaten
  • cups All-purpose flour Plus more for rolling
Walnut Filling
  • 1 pound Walnuts Finely ground
  • 1 cup Sugar Granulated
  • ¼ cup Milk Room temperature
  • 2 tablespoons Butter Melted
  • 1 teaspoon Cinnamon Optional

Equipment

  • 1 Stand mixer With dough hook
  • 1 Large mixing bowl For rising dough
  • 1 Food processor For grinding walnuts
  • 1 Rolling pin Any style
  • 1 Baking sheets Lined with parchment
  • 1 Pastry brush Optional, for egg wash

Method
 

Step 1:
  1. Warm the milk until just warm to the touch. Stir in the yeast and 1 teaspoon sugar. Let it sit for 5–10 minutes until foamy.

  1. Add the yeast mixture to a stand mixer bowl. Add remaining sugar, salt, butter, eggs, sour cream, and 1 cup flour. Mix on medium speed.

  1. Gradually add the remaining flour until a soft, slightly sticky dough forms and pulls away from the bowl.

Step 4:
  1. Shape the dough into a ball and place it in a greased bowl. Cover and let rise in a warm place for 1 hour, until doubled.

Step 5:
  1. Mix ground walnuts, sugar, cinnamon, melted butter, and milk until a thick, spreadable filling forms.

Step 6:
  1. Punch down the dough and divide it into 4 equal pieces. Keep unused dough covered.

Step 7:
  1. Roll one piece into a rectangle about 12×10 inches. Spread filling evenly, leaving a small border.

  1. Roll tightly from the long side, seal the edges, and place seam-side down on a lined baking sheet.

Step 9:
  1. Cover rolls loosely and let rise for 30 minutes. Preheat oven to 350°F.

  1. Bake for 30–35 minutes until golden brown. Cool completely before slicing.

Notes

This recipe makes 4 nut rolls. Let the rolls cool fully before slicing or the filling may smear. If the dough feels sticky, add flour slowly. Even if a roll cracks slightly, it will still taste great.
