My sunshine-inspired French toast made with brioche and topped with bananas, strawberries, and kiwi for a bright Florida-style breakfast.

Ingredients
  

  • 4 slices Brioche bread 1-inch thick
  • 2 large Eggs beaten
  • 1 cup Half & half or whole milk
  • 2 tbsp Brown sugar packed
  • 1 tsp Cinnamon ground
  • 1 tbsp Vanilla extract
  • 1 tsp Orange zest optional optional adds brightness
  • 2 tbsp Butter for cooking
  • 2 medium Bananas sliced
  • 1 cup Strawberries hulled and sliced
  • 1 whole Kiwi peeled and sliced peeled and sliced
  • -- __ Maple syrup optional for serving
  • __ __ Cinnamon sugar optional for topping

Method
 

Step 1
  1. Whisk eggs, half & half, brown sugar, cinnamon, vanilla, and orange zest in a mixing bowl until smooth.

  1. Pour the custard into a shallow dish and dip each brioche slice, letting both sides soak evenly.

  1. Heat butter in a skillet over medium heat until melted and slightly bubbly.

  1. Add soaked brioche slices to the skillet and cook 2–3 minutes per side until golden brown.

  1. Transfer cooked toast to a plate and top with sliced bananas, strawberries, and kiwi.

  1. Finish with cinnamon sugar and a drizzle of maple syrup, if desired.

Notes

Use fresh, ripe fruit for the sweetest flavor. If preparing ahead, slice the fruit right before serving to keep it bright and juicy.
