Method
 

Step 1:
  1. Sift the bread flour, all-purpose flour, baking soda, and kosher salt together, then set aside.

  1. Brown the butter in a saucepan until golden and nutty. Pour into a measuring cup and add water to reach exactly 1 cup. Let cool.

  1. Mix the dark brown sugar, granulated sugar, vanilla, and espresso powder in a bowl.

  1. Add the cooled brown butter and cream everything until smooth.
