Ingredients
  

  • 2 cups Fresh lemon balm leaves Or 2 tbsp dried leaves
  • 2 tsp Fresh ginger grated Optional but recommended for metabolism
  • 2 tsp Fresh lemon juice About 1 lemon
  • 4 cups Filtered water Use fresh cold water
  • 2 tsp Raw honey Optional to taste

Method
 

Step 1
  1. Bring 4 cups of filtered water to a gentle boil in a small pot or kettle.

  1. Place the fresh lemon balm leaves and the grated ginger into a teapot or heatproof jar. If using dried lemon balm, measure 2 tablespoons instead.
Step 3
  1. Pour the hot water directly over the herbs, then immediately cover the teapot or jar to trap the volatile oils and aroma.
Step 4
  1. Let the mixture steep for 7–10 minutes. Steep for 7 minutes for a lighter flavor and up to 10 minutes for a stronger, more citrusy brew.
Step 5
  1. Strain the tea through a fine mesh strainer into a heatproof measuring cup or directly into mugs.
Step 6
  1. Stir in the fresh lemon juice and honey if using. Taste and adjust sweetness or lemon to preference.
Step 7
  1. Serve warm, or chill for iced lemon balm tea. Store any leftover brewed tea in an airtight jar in the refrigerator for up to 48 hours.

Notes

  • Fresh lemon balm offers brighter flavor than dried, but dried works in a pinch—use approximately 1 tbsp dried per cup of water.
  • For best aroma, harvest leaves before the plant flowers.
  • To make a metabolism-boosting version, steep a green tea bag with the herbs for a mild caffeine lift.
  • If making iced tea, brew double strength, chill, then dilute over ice as needed.
