A bright, sweet, citrusy lime syrup I love using for drinks, cakes, and fruit salads. It’s simple, fresh, and only needs a few ingredients.

Ingredients
  

  • 1 cup Granulated sugar
  • 1/2 cup Water
  • 1/2 cup Fresh lime juice About 4–6 limes
  • Optional — Lime rinds or zest For stronger lime flavor

Equipment

  • 1 Saucepan 2–3 quart size
  • 1 Fine mesh strainer For removing seeds and pulp
  • 1 Funnel Helps pour syrup into the bottle
  • 1 Glass bottle or jar Must be airtight

Method
 

Step 1
  1. Sterilize your jar or bottle by washing with hot soapy water and rinsing well. I sometimes pour boiling water inside just to be safe.

  1. Wash the limes and juice them until you get 1/2 cup. Strain to remove seeds.

  1. Add the sugar, water, and strained lime juice into a saucepan.

  1. Warm over medium-high heat until the sugar fully dissolves and the syrup just begins to simmer.

  1. Remove from heat, add lime rinds or zest, then return to a gentle simmer for about 30 seconds.

  1. Cover and let steep 10–30 minutes depending on how strong or bitter you want the lime flavor.

  1. Strain the syrup, let it cool fully, then pour into your bottle and refrigerate.

Notes

I always keep this syrup in the fridge, and it stays good for about 3–4 weeks. You can freeze it too—tiny cubes work great for iced tea or mocktails. If the syrup tastes too bitter, cut the steeping time shorter next time.
