Mary Berry Cheese Scones Recipe

These are my go-to savoury cheese scones whenever I want something warm, comforting, and quick. They’re light, fluffy, packed with cheesy flavour, and honestly perfect split open with cold butter. Simple ingredients, reliable results, and always a hit in my kitchen.

Ingredients
  

  • 225 g Self-raising flour Sifted
  • 1 tsp Baking powder Optional but helpful
  • 50 g Butter Cold diced
  • ¼ tsp Salt Adjust to taste
  • 1 pinch Mustard powder or cayenne Optional
  • 100 g Mature cheddar cheese Grated
  • 1 large Egg Free-range if possible
  • 100 ml Milk Plus extra for brushing

Equipment

  • 1 Large mixing bowl For dough
  • 1 Pastry cutter or fingertips To rub in butter
  • 1 Rolling pin Optional
  • 1 Round cutter About 5 cm
  • 1 Baking tray Lined with parchment
  • 1 Pastry brush For milk glaze
  • 1 Wire rack Cooling scones

Method
 

Step 1:
  1. I preheat my oven to 220°C (425°F) and line a baking tray with parchment paper so it’s ready to go.

  1. In a large bowl, I sift together the self-raising flour, baking powder, salt, and mustard or cayenne so everything is evenly mixed.

  1. I add the cold diced butter and rub it into the flour using my fingertips until the mixture looks like fine breadcrumbs.

  1. Most of the grated cheese goes in next. I mix it through lightly, saving a little for the tops later.

  1. In a jug, I whisk the egg with the milk, then gradually stir it into the dry ingredients until a soft, slightly sticky dough forms.

Step 6:
  1. I turn the dough out onto a lightly floured surface and gently pat it out to about 2 cm thick, being careful not to overwork it.

  1. Using a sharp cutter, I press straight down to cut out the scones and place them onto the prepared tray.

  1. I brush the tops with a little milk, sprinkle over the remaining cheese, and bake for 12–15 minutes until well risen and golden.

Notes

I always remind myself that scones need a gentle hand. Cold butter, minimal mixing, and a properly hot oven make all the difference. These are best eaten the day they’re baked, still a little warm, though I’ve definitely enjoyed one cold the next day with no complaints at all.
