  • 2 tbsp Ketchup —
  • 2 tbsp Mayonnaise —
  • 8 — Sausages Skins removed to form patties
  • 1 tsp Chilli flakes Optional
  • 12 — Eggs 3 per burger
  • 4 tbsp Butter For scrambling
  • 4 — Spring onions Finely chopped
  • 4 tsp Saltbush seasoning Mixed into eggs
  • 4 slices Cheese Burger cheese or cheddar
  • 2 — Red onions Thinly sliced
  • 2 tbsp Balsamic vinegar For caramelising

Method
 

Step 1
  1. Remove sausage meat from casings and mix with chilli flakes, salt, and pepper. Shape into 4 patties. Pan-fry for 4 minutes per side until golden. Set aside.

  1. In a small pan, cook sliced red onions in a little oil for 5 minutes. Add balsamic vinegar and cook 2 more minutes until caramelised.

  1. Whisk eggs with spring onion, saltbush seasoning, salt, and pepper. Melt butter in a pan and scramble eggs gently over low heat until soft and creamy.

  1. Lightly toast brioche buns. Spread mayo and ketchup on bottoms. Add sausage patty, saltbush scrambled eggs, cheese slice, and caramelised onions. Add top bun and serve warm.
